Description: Phat sayongte (Thai script: ผัดซายองเต้) is best translated as "stir-fried mountain melon greens". Another name used for this plant in Thailand is fak maeo (Thai script: ฟักแม้ว). In Thailand the young vines and leaves, yot sayongte (Thai script: ยอดซายองเต้) or yot fak maeo (Thai script: ยอดฟักแม้ว), are eaten stir-fried or as a vegetable in certain soups. These greens have a very sweet taste and combine extremely well with oyster sauce. The plant, known in the West as Chayote and originally from Central America, in Thailand grows mainly in the mountains up north.
