Description: Kruidkoek', Peperkoek or Ontbijtkoek are different Dutch and Flemish names for their local variations of gingerbread/pain d'épices. It is a heavy and sweet, fairly moist and spiced, bread-like cake that is often eaten with butter, either for breakfast or as a snack with hot coffee or tea. The dough is made with rye flour, and honey or molasses. The spices used are cinnamon, cardamom, cloves, pepper, nutmeg, aniseed, coriander, and ginger.
