Description: Hugh Fearnley-Whittingstall, in his "Meat" book says that thickening stews using flour robs them of flavour and a pig's trotter does a similar thickening job and also adds more flavour. So here we are, then: my stew is about to come up to a simmer in preparation for three hours' slow cooking with a pig's trotter inside it. I'm pretty interested in how it's going to turn out and also very happy that we have an excellent local butcher that sells stuff like this.
