To this creamy base, a special ingredient called meat glaze is added. Meat glaze is a very concentrated, flavorful liquid made by slowly reducing meat stock. Adding this glaze gives Albufera sauce its unique ivory-white color.

How is Albufera Sauce Used?

Albufera sauce is often served with fancy dishes. It goes especially well with poultry, like chicken or turkey. It's also a great match for sweetbreads, which are a type of meat from young animals. The rich, creamy flavor of the sauce adds a touch of elegance to these dishes.
