The Gentleman's Relish

Gentleman's Relish is a special spread from Britain. It's made mostly from anchovies, which are small fish. It's also called Patum Peperium. This fancy Latin name means 'pepper paste'. An Englishman named John Osborn invented it way back in 1828.

It tastes savory, salty, and a bit like fish. The main ingredients are anchovies (at least 60%), butter, and a mix of secret herbs and spices. Today, only one person at Elsenham Quality Foods in England knows the secret recipe. This company makes Gentleman's Relish.

How to Enjoy Gentleman's Relish

People usually eat Gentleman's Relish spread very thinly. It's best on hot, buttered white toast. You can eat it plain, or add thin slices of cucumber. Some people like it with mustard and cress sprouts.

This relish can also add flavor to other foods. You can mix it into ground meat for a different-tasting cottage pie. It's also good in fish cakes, potato cakes, or croquettes. Try melting it into scrambled eggs. It can even be a tasty topping for baked potatoes. It is also a key ingredient in a dish called Scotch woodcock.

Elsenham Quality Foods makes other similar spreads too. One is called Poacher's Relish. It's made from smoked salmon, butter, spices, and lemon zest. Both Gentleman's Relish and Poacher's Relish come in plastic containers. You can also buy them in nicer, reusable ceramic pots.

In 2008, a third type was introduced. It's called Angler's Relish. This one is made from smoked mackerel, salted butter, lemon juice, and other spices. It was created to celebrate 180 years since John Osborn made the first Gentleman's Relish. These other relishes are also usually eaten on toast or savory crackers.
