Description: Puntarelle sold in the market of Torino (Italy). This is an endemic vegetable of Italy, and is formed by the sprouting stems of Catalogna chicory. They are cut in thin longitudinal slices, put in cold water where they curl, and eaten raw in salad with only some oil and crushed anchovies. A delicacy.
