Description: Khai dao (Thai script: ไข่ดาว; lit. "star egg") is a Thai style fried egg. Deep-frying the egg produces a crispy texture. Khai dao can be served as an additional accompaniment to a dish, such as in kraphao mu rat khao khai dao ("basil fried minced pork with rice and fried egg") or used in a Thai salad (yam khai dao). If a runny yolk is required, this is specified by saying khai dao mai suk (Thai script: ). Fried egg with a harder, set yolk is called khai dao suk (pan klang) ("pan klang" = medium). For fried egg salad a very hard, thoroughly set yolk is needed: khai dao suk mak.
