It was started in September 2016 by an organization called the Center for Jewish–Christian Understanding and Cooperation (CJCUC). In September 2012, the Center for Jewish–Christian Understanding and Cooperation (CJCUC) started a program to help the Christian community in Bethlehem. They worked with Pastor Steven Khoury from Holy Land Missions. This program was called the Food Voucher Program.

David Nekrutman, who is the Executive Director of CJCUC, had been talking with the local Christian Arab community since 2009. He learned that many Christians in Bethlehem were struggling with poverty. He wanted to help them with this big problem.

The first money for the Food Voucher Program came from Jewish donors in America. They used this money to buy food vouchers from the Rami Levy supermarket chain. In 2013, another group, the International Christian Embassy of Jerusalem (ICEJ), joined the program to help.

In 2016, the Food Voucher Program got a new name: "Blessing Bethlehem." It was officially introduced at the LifeLight Music Festival in Sioux Falls, South Dakota. Since then, Blessing Bethlehem continues to help people in need by providing food and support.
