Cuisine minceur (pronounced "kwee-ZEEN man-SOOR") is a special way of cooking created by French chef Michel Guérard. It means "slimming cooking" and focuses on making lighter versions of classic French dishes. People who tried it often said it tasted even better than the original dishes, but was less heavy.
A New Way to Cook
In the 1960s, Michel Guérard was one of the first chefs to start a new cooking style called nouvelle cuisine (pronounced "noo-VEL kwee-ZEEN"). This was a big change from the older, very rich French cooking style known as haute cuisine (pronounced "OHT kwee-ZEEN").
Chefs like Guérard wanted food to be:
- Lighter and fresher
- Made with ingredients that tasted more like themselves
- Less heavy with butter and cream
The Spa and Slimming Cuisine
In 1974, Chef Guérard moved to a town called Eugénie-les-Bains. His wife, Christine Barthelemy, was running a health spa there. Spas are places where people go to relax and improve their health.
Guérard realized that many people at the spa were looking for healthier food options. He wanted to create delicious meals that were also low in extra fat, sugar, and salt. He understood that people on special diets often felt sad about their food choices. This led him to create cuisine minceur.
Becoming Famous
Guérard called his new style "great slimming cuisine." It was perfect for the spa guests who wanted to eat well while focusing on their health. His ideas became very popular. On February 9, 1976, he was even featured on the cover of Time magazine! The headline said, "The new gourmet law: hold the butter," which showed how his lighter cooking style was changing the world of food.
