During ultrafiltration, water is removed from the cow's milk. This makes the milk thicker and concentrates all the good stuff in it, like nutrients and proteins.
This special process helps to speed up how quickly the cheese can be made. While a classic Brie cheese might take about eight weeks to be ready, Fromager d'Affinois can be made in just two weeks! Because of ultrafiltration, this cheese also keeps more nutrients and proteins from the milk. It also has a fairly high fat content, around 60%.
Look and Feel
