Ghee is a special type of clarified butter that's very popular in Indian and Pakistani cooking. Think of it as a super pure form of butter oil! How Ghee is Made

The Process

When the butter simmers, it separates. Any bits that aren't pure fat, like milk solids or impurities, float to the top. These are carefully skimmed off. The clear, golden liquid fat that remains is the ghee. The solid bits that sink to the bottom are discarded.

Storing Ghee

One cool thing about ghee is that it doesn't need to be kept in the fridge! Because the milk solids and water have been removed, it can be stored at room temperature for a long time without spoiling. This was very helpful in ancient times before refrigerators existed.
