Gilli Davies' Early Life and Restaurants
When Gilli Davies was just 19, she opened her own small restaurant, called a bistro, in Oxford. Later, she managed a restaurant in Berlin. She also ran a restaurant in Cardiff that focused on organic food. Today, Gilli Davies lives in York.

Gilli Davies has written many cookbooks. Her books share recipes from Welsh cuisine, Cypriot cuisine, and ideas for cooking with organic food.
In October 2015, a publisher named Graffeg released Flavours of Wales. This was a set of five small books. Each book had more than 20 recipes showing off Welsh cooking.
