Hirtenkäse, also called "herder's cheese," is a special cheese from the Allgäu area in Southern Germany. It is made from cow's milk.

This cheese gets its name because it's made from the milk of cows that have been grazing high up in the Alps. Every fall, around mid-September, cow herders bring their cows down from the mountains into the Allgäu region. This event is called the Almabtrieb, and it's a big celebration! Hirtenkäse is made from the milk these cows give after their journey. It usually ages for about eight months.
