This traditional food is very popular in Northern Finland. People usually make it in the spring. Kuivaliha is a lot like jerky. Both were created to help keep meat fresh for a long time. It's a great snack for camping trips because it's light and full of good nutrients. You can also find it in a Finnish soup called "kuivalihakeitto".

How is Kuivaliha Made?

Making Kuivaliha is a special process. It happens outdoors, usually in March and April. This is because the Finnish spring has just the right weather.

The Perfect Weather

For Kuivaliha to turn out perfectly, the weather needs to be just right. During the day, the temperature should be above freezing. But at night, it needs to drop below freezing. This cold night air helps to dry the meat faster. It also stops insects from getting to the meat. A dry wind and plenty of sunshine are also very important.

If the weather is too warm, the meat might spoil. If it's too cold, the meat could get "freezer burn." This means it dries out too much and loses its quality. Because of these special weather needs, Kuivaliha cannot be made in the traditional way during other seasons.

The Drying Process

To make Kuivaliha, strips of salted meat are hung outside. They are usually placed facing south to catch the most sunshine. People often use netting around the meat. This helps to keep birds and other animals away. The meat hangs and dries in the open air for about three weeks. After this time, it becomes the delicious, chewy Kuivaliha.
