A Family Business Continues
In 1885, something unexpected happened. William Wirt Lamme had a problem with some money he owed. His son, David Turner Lamme, stepped in to help. David came to Austin and paid off the money, making sure the candy store stayed in the family. Since then, Lammes Candies has always been owned and run by the Lamme family in Austin. Over the years, they have opened more stores in the beautiful Texas Hill Country.
The Famous Texas Chewie Praline
One of the most famous candies from Lammes is the "Texas Chewie" Pecan Praline. A praline is a sweet candy made with nuts, usually pecans, sugar, and butter or cream.
Creating a Special Recipe
William W. Lamme spent seven years working on the perfect recipe for his praline. He tried many different ways to make it, tasting and testing each batch until it was just right. When he finally perfected it, he started making small amounts, about 25 pounds at a time. At first, you could only get these special pralines if you asked for them directly.

The "Texas Chewie" Pralines became so popular that more people wanted to try them. In the 1920s, Lammes Candy started a mail order service. This meant people could order the pralines and have them sent right to their homes, no matter where they lived. This helped the "Texas Chewie" Praline become famous all over the country.
