Leonese cuisine is famous for its cured meats, often called embutidos. These are meats that have been preserved, usually by salting, drying, or smoking.

Cecina de León

Cecina is a special type of dried beef from León. In the Leonese language, cecina means "meat that has been salted and dried." Cecina de León is made from the back legs of beef. It's salted, smoked, and air-dried in the province of León. This gives it a unique flavor and texture. It's so special that it has a "Protected Geographical Indication" (PGI) status. This means it can only be called Cecina de León if it comes from that specific area and is made in the traditional way.

Botillo

Botillo is another traditional meat product, very popular in the western parts of León, especially in a region called El Bierzo. It's a type of sausage made from different parts of a pig, like ribs, tail, and bones with some meat still on them. These pieces are chopped up, seasoned with salt, pepper, garlic, and other spices. Then, they are stuffed into a pig's stomach (cecum) and partly smoked. Sometimes, it can also include pork tongue or jaw, but these never make up more than 20% of the sausage. Botillo is usually cooked and served hot. It also has a PGI status, just like Cecina de León.

Wines from León

The León region is also known for its wines. The climate and soil here are perfect for growing grapes.

Bierzo Wines

The Bierzo wine region is in the west of León province. It covers a large area with many small valleys and a wide, flat plain. Wines from Bierzo are often made from the Mencía grape, which gives them a distinct flavor.

León Wines

Another wine region is simply called León, located in the southeast of the province. This area also produces unique wines that are popular in Spain.

Sweet Treats

León offers many delicious sweets and pastries. These are often enjoyed with coffee or as a dessert.

  • Mantecadas de Astorga: These are small, soft, and buttery sponge cakes, very popular in the town of Astorga.
  • Hojaldres de Astorga: These are flaky pastries, also from Astorga, known for their delicate layers.
  • Lazos de San Guillermo: These are sweet, ribbon-shaped pastries.
  • Nicanores de Boñar: These are crispy, thin wafers, a specialty from the town of Boñar.

Cheeses

León also produces some tasty cheeses.

  • Queisu de Valdión (Valdeón cheese): This is a strong, blue cheese from the Valdeón valley. It's known for its intense flavor and creamy texture.
