The Story of Mak's Noodle
Mak's Noodle has a long and interesting history. It started way back in the 1960s. Today, Mak Chi-ming runs the restaurant. He is the grandson of Mak Woon-chi (麥煥池). Mak Woon-chi was a very skilled chef. He even cooked for a famous leader, Chiang Kai-shek! People say the noodle recipe is still the same. It has not changed since Mak Woon-chi's time.
How It All Began
The restaurant's story began in Guangzhou, China. Mak Woon-chi opened an eatery there before World War II. Later, one of his sons, Mak King-hung (麥鏡鴻), came to Hong Kong. People called him Mak Ngan (麥奀) because he was very skinny.
In 1968, Mak King-hung started an open-air food stall. This stall was in Central, Hong Kong. His younger brother was the chef there. Mak King-hung stopped running the stall in 1983. The Hong Kong government paid him HK$36,000. This was like a payment for giving up his stall license.
New Beginnings
Mak King-hung's oldest son, Mak Chi-chung (麥志忠), opened his own restaurant. It was called Chung Kee Noodles (忠記麵家). This happened in 1986.
Then, in 1989, Mak King-hung started his original business again. He partnered with his son-in-law. They opened a new restaurant on Wellington Street. He managed this restaurant himself. He retired again in 1996. His second son, Mak Chi-ming, took over the business. Mak Chi-ming is the owner today.
