What is Masuzushi?

Masuzushi is a unique kind of sushi. Unlike the small, individual pieces you might usually see, Masuzushi comes as a round, pressed block. It is made with vinegared rice and a layer of cured trout. This trout is usually a type of salmon trout, which has a lovely pink color.

This tasty dish is especially popular in Toyama. People often buy it as a gift or a snack for their train journeys. It's a great way to remember a trip to Toyama. How is it Made?

Making Masuzushi is a careful process. First, a layer of vinegared rice is placed into a round mold. Then, slices of cured trout are carefully arranged on top of the rice. Sometimes, there's another layer of rice on top of the fish. The whole thing is then pressed down very firmly. This pressing gives Masuzushi its unique, compact shape. When you're ready to eat it, you usually cut the round block into wedges, like a pie.
