The pasilla chile (pronounced pah-SEE-yuh) is also known as chile negro. It is a dried form of a fresh chili pepper called the chilaca. This pepper belongs to the Capsicum annuum species. The name "pasilla" means "little raisin" because of its dark, wrinkled skin when dried.
Pasilla chiles have a rich flavor and can be mild to hot. When dried, they are usually about 6 to 8 inches (15 to 20 cm) long. They are also about 1 to 1.5 inches (2.5 to 3.8 cm) wide.
The fresh chilaca pepper is long and narrow. It can grow up to 9 inches (23 cm) in length. Often, it has a twisted shape, which usually disappears when it dries. Chilaca peppers start as dark green and turn dark brown when they are fully ripe.
Sometimes, in places like the United States, people might mistakenly call a different pepper "pasilla." They might use the name for the poblano pepper. The dried form of the poblano pepper is called an ancho chile. It is important to know the difference between these peppers.
