Paula Wynne Stephens Lambert was born on July 5, 1943. She was born in Santa Maria, California. Paula is an American cheesemaker, author, and teacher. She makes special, handmade cheeses. Paula grew up in Fort Worth, Texas.

When she was a college student, she studied art history. She spent some time in Perugia, Italy. After college, she lived in Italy for a while. She really enjoyed the fresh mozzarella cheese there. In 1982, she started her own company. It was called the Mozzarella Company. She opened it in Dallas, Texas. Paula has written two books about cheese. She also teaches cooking classes.
