Sanxiang noodle (pronounced "San-shyang") is a super popular local food from Zhongshan city in Guangdong, China. This special noodle has been around for over 200 years! It's known for being round and stretchy, a bit like another famous Chinese noodle called Guiling noodle.

People love Sanxiang noodles because they can be made in many different ways. You can enjoy them with lots of yummy toppings like meat, chicken, vegetables, or roast pork. They can be boiled in soup or stir-fried, making them a tasty meal for any time!

The Story of Sanxiang Noodle

Sanxiang noodle has a history of more than 200 years. It first came from a small village called Baishihuang ("White Stone Ring"). The main ingredient for these noodles is a type of rice called glutinous rice.

Long ago, the people in Baishihuang used fresh spring water from the mountains to make their noodles. This made the noodles extra special! During festivals, everyone in the village would celebrate with this unique food. For example, on the 14th day of the lunar July, people would eat Sanxiang noodles for both breakfast and lunch.

It is said that these noodles bring good luck because of their long, round shape. Since the 1980s, factories have been built to make Sanxiang noodles for export. Thanks to this, Sanxiang noodle is now one of the five most famous noodle brands in Guangdong province!

How Sanxiang Noodles Are Made

Old Ways of Making Noodles

About 150 years ago, Sanxiang noodles were often made from leftover rice, especially rice from the day before. People back then didn't want to waste any food. They were very clever at using what they had!

They would dry the leftover rice in the sun to remove the water. Then, they ground the dried rice into a fine powder. They mixed this powder with fresh, sweet spring water to make a dough. They would then skillfully knead the dough and carefully shape it into thin noodles.

Modern Ways of Making Noodles

Today, the old ways of making Sanxiang noodles by hand are not used as much. This is because many people want to eat these noodles, and technology has improved. Now, machines are widely used to make Sanxiang noodles.
