Skillet is a popular restaurant chain in the Seattle area. It started as a special food truck that sold delicious burgers. This food truck was famous for something called bacon jam. People even called it a "restaurant on wheels" in 2011. That same year, Skillet opened its first diner in Seattle.
The person who started Skillet sold the business in 2013. During the Covid-19 pandemic in 2020, Skillet stopped using its food trucks. But it still has five locations open today. You can find full restaurants at Capitol Hill and Post Alley. There are also places at SeaTac Airport, Seattle Center, and Skillet Regrade on 6th Avenue. Many of Skillet's dishes still feature their special bacon jam.
History of Skillet
Skillet was listed in Details magazine in 2011. It was named one of America's best mobile kitchens. Skillet became well known for its bacon jam around 2009. They even sold this jam by mail so people could enjoy it at home.
Josh Henderson created the bacon jam. He focused on cooking bacon fat with reduced vinegar and onions. This mix was cooked in one pot and needed regular skimming. A review from The Takeout in 2011 praised it. They said the grilled cheese with bacon jam was a favorite item. Josh Henderson sold the Skillet business in 2013.
