Stuffed cucumber facts for kids
The stuffed cucumber is a dish found in varied world cuisines and are also available at some state fairs in the United States. After being hollowed out with a specialized tool the filling is piped into the cucumber. Fillings vary and can be made with chicken, tuna or seafood salad, often with mayonnaise, cream cheese or ranch dressing. Chicken salad stuffed cucumber was a favorite at the Arkansas State Fair in 2018 where it won an award for being the "Most Creative" offering. It was one of the new healthy options offered as an alternative to "deep fried or chocolate covered food".
Many different fillings are possible with French dressing, mayonnaise and fresh ingredients like tomatoes, walnuts, celery, and onions. Seafood variations can be made by adding lobster meat.
Some versions and breaded and fried before being served whole, or sliced to serve as a garnish for another dish. Others are stewed or baked in gravy.
