The solid sugar crust is made from a very sweet sugar solution. This solution is so full of sugar that it forms a solid shell. This shell completely seals the liquid filling inside. After the crust forms, the chocolate maker can cover it with a layer of chocolate. This process is called enrobing.

Forming the Sugar Shell
After the liquid is poured, the top surface that is open to the air is lightly dusted with more starch. This helps the crust form evenly. After about two hours, a solid crust begins to form around the liquid.
Finishing the Crusts
Once the crusts have formed, they are carefully flipped over. They are then left to sit in the starch molds for a full twenty-four hours. This resting time helps the shells become strong and fully set. After this, the sugar shells are ready to be covered in chocolate.
