Tupig is a yummy Filipino rice cake. People also call it intemtem or kangkanen. It comes from the northwestern part of Luzon in the Philippines. You can find it especially in areas like Pangasinan, Tarlac, and the Ilocos Region.

This sweet treat is made from special sticky rice. The rice is ground into a paste called galapong. Then, it's mixed with creamy coconut milk, sweet muscovado sugar, and thin strips of young coconut, also known as buko.

The mixture is carefully wrapped in banana leaves. It's shaped like a cylinder, then cooked over hot charcoal. People turn it often so it cooks evenly. The name tupig means "flattened" because of how it looks after cooking.

What is Tupig?

Tupig is a popular snack in the Philippines. It is a type of rice cake that is often sold as street food. You can find it especially during the Christmas season in places like Pangasinan.

People usually enjoy tupig with a warm cup of ginger tea. This tea is called salabat. The sweet and chewy tupig goes very well with the spicy, warm tea.

How is Tupig Made?

Making tupig involves a few simple steps. First, special sticky rice is soaked in water. This makes it soft enough to grind into a smooth paste. This paste is known as galapong.

Next, the galapong is mixed with other tasty ingredients. These include rich coconut milk, dark brown muscovado sugar, and fresh strips of young coconut. These ingredients give tupig its unique sweet and chewy flavor.

After mixing, the dough is wrapped in banana leaves. The leaves give the tupig a nice smell and help it cook. Each piece is shaped like a log. Then, it is baked directly over hot charcoal. The cooks turn the tupig often to make sure it cooks perfectly on all sides.

Types of Tupig

There is a special kind of tupig called tinubong. It uses the same main ingredients as regular tupig. However, the way it is cooked is different.

Tinubong is cooked inside bamboo tubes. These tubes are then buried in hot embers. This method gives tinubong a slightly different taste and texture. It's another delicious way to enjoy this traditional Filipino treat.
