Every year, during the first month of summer, people in the Indian state of Goa make a special traditional drink called Urrak. It's very popular in the local shops and eateries across Goa.

Feni is another drink, but it's made by distilling cashew apple juice twice. Urrak is different because it's made from the first single distillation process, which happens in early spring. Urrak might have small bits of cashew apple in it. It doesn't last long and is best enjoyed fresh after it's made.

During this first distillation, Urrak is created. It usually contains about 10-15% alcohol.

Feni is a more refined product made from the same juice, but it goes through a second distillation. Feni typically contains about 40-45% alcohol and lasts much longer than Urrak. Today, you can even find Cashew Feni sold by well-known brands.

How Goan Feni is Made

The process of making Feni starts with ripe cashew apples that have fallen from the trees. These apples are carefully picked by hand.

Extracting the Juice

Next, the cashew apples are gently pressed or "stomped" to get their juice out. This is a bit like how grapes are pressed to make wine. Just as brandy is made from grape wine, Feni is made from cashew apple wine.

First Distillation: Making Urrak

In the first step of distillation, the cashew apple wine is heated. This process turns it into a lighter drink called Urrak. Urrak is the first product of this distillation.

Second Distillation: Creating Feni

After Urrak is made, it goes through a second distillation. During this stage, skilled makers carefully control the heat. This helps to create the stronger second drink, which is Feni (liquor). Feni has a different taste and is stronger than Urrak.

The unique flavors of Feni come entirely from the cashew apple itself and the traditional pots used to make it. The special character of Feni comes from the old traditions and knowledge passed down through many generations in Goa.

Traditionally, nothing extra is added to the final Feni product. This means no added flavors, colors, or smells. However, some younger makers in the region are now trying European methods of aging. Because of this, you might find flavored Feni that includes the tastes of Indian spices.
