Vin cuit (pronounced "van kwee"), or cooked wine, is a special sweet wine. It comes from the Provence region in France. This unique drink is made by gently heating grape juice. The juice is warmed until it becomes thick and syrupy, but it is never boiled.

After the grape juice is thick, it is put into barrels. Here, it goes through a process called fermentation. This is where the sugar in the grape juice turns into alcohol. The final wine usually has about 14% alcohol. Vin cuit is different from other sweet wines because it is not a fortified wine. This means no extra alcohol is added to it. Its Italian cousin is called vino cotto.

Making Vin cuit is a very old tradition. Only a small amount of this wine is made each year. It is often served as a special treat during Christmas Eve celebrations.

What is Vin Cuit?

Vin cuit is a type of dessert wine. This means it is usually enjoyed after a meal with sweet foods. It has a rich, sweet taste. The alcohol level is typically around 14% to 15%.

It is different from "vin doux naturel," or "natural sweet wine." Natural sweet wines are made by stopping the fermentation early. This keeps a lot of the natural sugar from the grapes in the wine. No cooking is involved in making natural sweet wines.

Protecting Vin Cuit

Winemakers in Provence are working to protect Vin cuit. They want it to receive AOC certification. This special label would show that Vin cuit is a unique product from Provence. It would also ensure it is made using traditional methods. This helps keep the history and quality of this special cooked wine alive.
