Ardrahan Farmhouse Cheese makes two kinds of cheese. These cheeses come from Ardrahan Farmhouse in Kanturk, County Cork, Ireland. The two types are called Ardrahan and Duhallow.
Eugene and Mary Burns first made Ardrahan cheese on their farm in 1983. They used traditional methods. Both cheeses are made only from the milk of the Burns' own cows. These cows are a special type called Friesian cows.
What is Ardrahan Cheese?
Ardrahan is a cheese that is semi-soft. It is made for vegetarians. The cheese uses pasteurised cow's milk. It also uses vegetarian rennet, which helps milk turn into cheese. Ardrahan cheese has 25% fat.
This cheese is shaped into round wheels. These wheels weigh 400 grams or 1.5 kilograms. It has a special rind that is washed with salty water. This washing helps different moulds grow on the rind. A version of Ardrahan cheese that has been smoked is also available.
Ardrahan cheese has a taste and smell like a farm. It also has a fresh, tangy flavour. This tang makes its rich, buttery taste even better. The cheese feels smooth inside. It has a deep yellow colour. The rind can be eaten and has a strong flavour. Ardrahan's inside is firm but a little crumbly. It gets its full flavour after four to eight weeks.
The Story of Ardrahan Cheese
Eugene and Mary Burns started making Ardrahan cheese in 1983. They used milk from their own Friesian cows. They followed old ways of making cheese.
Since 2006, they have also made Duhallow cheese. This cheese is medium-hard. It is also made from pasteurised cow's milk. Duhallow cheese also uses vegetarian rennet. Most of the Duhallow cheese is sent to the United States.
Ardrahan's Awards
Ardrahan cheese has won many awards. In 1994, it won the Irish Food Writers Guild's Good Food award. After that, Ardrahan won even more awards. These include many medals from the British Cheese Awards. It also won awards from the World Cheese Awards.
