Baghali polow (pronounced Bah-gah-LEE Poh-LOH) is a yummy and popular dish from Iran. It's a type of pilaf, which is a special way of cooking rice. This dish is made with three main ingredients: fluffy rice, green fava beans, and fresh dill.
In the Persian language, baghali means "fava bean." The word polo means "pilaf," which is a rice dish where the rice is cooked in a flavorful broth or with other ingredients. So, "Baghali polow" literally means "fava bean pilaf"!
To make this tasty meal, rice and green fava beans are first cooked in boiling water. Once they are partly cooked, they are layered in a pot with lots of fresh dill. Sometimes, a little bit of saffron water is added to give the rice a beautiful golden color and a lovely smell. The whole mix is then gently baked until it's perfectly ready.
