Chicken Marsala (pronounced Mar-SAH-lah) is a yummy Italian-American dish. It features thin slices of chicken in a rich sauce made with Marsala wine. This dish is a spin-off of traditional Italian scaloppina dishes. There are many different kinds of scaloppina all over Italy.
This tasty dish first appeared in the 1800s. It might have been created by English families. They lived in western Sicily, a region in Italy. Marsala wine, a special fortified wine, is made in Sicily.
How Chicken Marsala is Made
Making Chicken Marsala involves a few steps. First, thin slices of chicken breast are lightly coated in flour. Then, they are quickly cooked in a pan until golden. After cooking, the chicken is taken out of the pan.
The same pan is then used to create the delicious sauce. Marsala wine is poured into the pan. It is cooked down until it becomes thicker, almost like a syrup. This process is called "reducing" the wine. Garlic is often added to the sauce for extra flavor.
