The Chimayó Cocktail is a special drink that was invented in 1965. It was created by Arturo Jaramillo, who owned the Rancho de Chimayó restaurant in Chimayó, New Mexico. This drink is made with tequila and apple cider.

Legend says that Arturo Jaramillo wanted to find a good use for all the apples growing in the Chimayó valley. That's how he came up with this unique drink. It quickly became the most famous drink at his restaurant!

What's in a Chimayó Cocktail?

The Chimayó Cocktail is made by mixing a few key ingredients. You start with 1½ ounces of tequila. Then, you add 1 ounce of unfiltered apple cider. To this, you mix in ¼ ounce of fresh lemon juice and ¼ ounce of a sweet berry liqueur called creme de cassis. All these ingredients are poured over ice.

The Special Touch of Cassis

The creme de cassis is a special ingredient. It gives the drink a pretty, light purple color. It also adds a nice sweetness. This sweetness helps to balance out the tart, or sour, taste of the lemon juice.

About the Cider

When we talk about "cider" in this recipe, we mean non-alcoholic apple cider. This is the kind of apple juice that is often cloudy. It is not the alcoholic drink known as "hard cider."
