About Clonmore Cheese
Clonmore cheese is a type of cheese similar to Gouda. It is made using a special ingredient called vegetarian rennet. This means it is suitable for people who eat a vegetarian diet.
You can find Clonmore cheese in two forms:
- One version is made with milk that has been pasteurised. This means the milk was heated to kill any germs.
- The other version uses raw milk, which has not been heated.
Clonmore cheese has a mild and slightly sweet taste. The longer it ages, the stronger its flavor becomes.
When Can You Find It?
This cheese is seasonal, meaning it's only made at certain times of the year. You can usually find Clonmore cheese from late March until early November. This is because the goats produce milk during these months.
The Goats Behind the Cheese
The farm has between 70 and 80 goats. They are a mix of two breeds: Saanen and Toggenburg. These goats are free-range, which means they can roam and graze freely. This helps them produce good quality milk for the cheese.
