Coyotas are delicious, flat, and round cookies from Mexico. They are a bit like a sweet pastry or a large, thin cookie. Traditionally, they are filled with a sweet brown sugar. But today, you can find them with many different yummy fillings! These include guava, caramel, chocolate, strawberry, and even peach.

The Sweet History of Coyotas

Around 500 years ago, people from Spain came to Mexico. They brought new foods like wheat, sugar, and goat's milk. These ingredients later became important for making coyotas.

Coyotas first appeared in 1954 in a place called Villa de Seris. This city is in Hermosillo, Sonora, Mexico. From there, these tasty cookies became famous! Now, you can find coyotas all over the world. In the United States, for example, many Mexican supermarkets sell them.

The name "coyota" has a special meaning. It describes a person of mixed Spanish and native heritage. It also means someone with dark skin and a graceful way about them.

What Goes Into a Coyota?

Making coyotas uses simple ingredients. Here is what you need:

  • all purpose flour
  • water
  • salt
  • shortening
  • piloncillo (This is a type of Mexican brown sugar. It is made from molasses and has a rich, sweet flavor.)

How Are Coyotas Made?

First, all the dry ingredients are mixed together. Then, shortening and water are added. This helps to make the dough just the right thickness.

Next, the dough is rolled into small balls. Each ball is then flattened and filled with your favorite sweet treat. After filling, the cookies are sealed up. They are then baked in an oven at 375 degrees Fahrenheit (about 190 degrees Celsius) for around 15 minutes.

Coyotas are often enjoyed with a warm drink. People like to eat them with milk, coffee, or hot chocolate. Sometimes, they are even topped with whipped cream for an extra special treat!
