Growing Up and Learning to Cook
Diana Dávila grew up near Chicago. She started helping out at her parents' taco restaurant when she was just 10 years old. This early start helped her learn a lot about cooking. Her first big step in cooking was at Hacienda Jalapeños. This was a fancy restaurant also owned by her parents. Important food critics praised her cooking there.
To learn even more, Diana went to a special cooking school. It was called Seasons of the Heart. This school was in Oaxaca, Mexico. She learned from a famous chef named Susana Trilling.
Becoming a Top Chef
After culinary school, Diana worked in several well-known restaurants. She cooked for different chefs, learning many new skills. For example, she worked as a fish cook at a restaurant called Roka.
She then spent four years working in Washington, D.C.. There, she worked for a famous restaurant owner named Jackie Greenbaum. Her talent was noticed quickly. In 2010, a magazine called Washingtonian named her one of 13 "Culinary Rising Stars." The next year, Washington Life magazine called her one of five "Female Force" chefs. In 2018, Food & Wine magazine recognized her as one of the "Best New Chefs."
After her time in Washington, D.C., Diana returned to Chicago. She opened her own restaurant called Innovative Cantina 1910. Later, she opened Mi Tocaya Antojería, which is very popular today.
