Eel noodles (Chinese: 鱔魚意麵; pinyin: Shàn yú yì miàn; Pe̍h-ōe-jī: Siān-hî ì-mī) is a famous noodle dish from Taiwan. It features thick, chewy egg noodles, often called yi mein, mixed with young yellow or finless eels. How Eel Noodles Are Made
