Eisbock milk (Chinese: 冰博克, Pinyin: bīngbókè), also known as freeze distilled milk, is a special kind of condensed milk drink. It's made using a cool process called low-temperature filtration. This method removes some of the water from regular milk. The idea for this unique milk was inspired by "eisbock," which is a strong type of beer from Germany.
How Eisbock Milk Was Invented
The idea of making fresh condensed milk by hand started with a Canadian barista named Ben Put. He first tried this method in 2017 during the World Barista Championship.
The next year, a barista from China named Pang Hui tried the same technique. Pang Hui then shared this method with another barista, Pan Zhimin. Pan Zhimin used this special milk to compete in the world championship.
After these competitions, coffee shops across China began using this handmade condensed milk. They used it to make delicious milk coffee.
In 2018, a Chinese company called BeFood noticed Eisbock milk in coffee and tea shops. They found a way to make this fresh condensed milk in large amounts. BeFood officially launched their Eisbock milk products in 2019.
Soon after, popular drink companies like Hey Tea and Lele Tea started using BeFood's Eisbock milk. They created new milk tea drinks with it, which came out in 2020.
What Makes Eisbock Milk Special?
Eisbock milk goes through a special cleaning process twice. This process removes more water from the milk. Because of this, the milk has a higher amount of milk protein and calcium.
Here's how it works: Milk freezes at a higher temperature than water. So, when the milk is frozen, the water separates from the important nutrients. When the milk thaws, it has less water. This means the protein and lactose (milk sugar) become more concentrated.
Eisbock milk can have a lot of protein, up to 6.2 grams per 100 milliliters. It also has a good amount of calcium, up to 210 milligrams per 100 milliliters.
Eisbock milk is often used in a popular coffee drink called "Dirty Coffee." This drink has a layer of strong espresso coffee on top of Eisbock milk.
