Flying Star Cafe is a popular restaurant chain in Albuquerque, New Mexico, USA. It's a private company, meaning it's owned by individuals, not by lots of shareholders. They serve all sorts of yummy food, like cakes, coffee, and ice cream.

How Flying Star Cafe Started

Flying Star Cafe opened its first spot in 1987. It was on Central Avenue in the Nob Hill area of Albuquerque. Back then, it wasn't called Flying Star Cafe. It was named Double Rainbow. This was because it was part of a famous ice cream chain from San Francisco.

Over time, the Albuquerque Double Rainbow wanted to sell more than just ice cream. They wanted to offer full meals too! So, they decided to change their name. They looked at over 300 different names. Finally, they picked "Flying Star" from a Chinese Firecracker Magazine.

Growing Bigger

Before the name change, Double Rainbow opened two more places. One opened in 1995 on Juan Tabo Boulevard. The third one opened in 2000 on Menaul Boulevard.

The name officially changed to Flying Star Cafe in 2001. This was when their fourth location opened. This new spot was in the North Rio Grande Valley. It had a super cool feature: a horse hitching post. This meant customers could ride their horses right up to the cafe! It also had a "Petio," which is a special outdoor area. Here, you could eat your meal right next to your pet.

More Flying Star Cafes opened over the years. In 2005, one opened in Downtown Albuquerque. This location even had a meeting room for business lunches. By 2008, Flying Star expanded outside Albuquerque. They opened a cafe in Bernalillo. The next year, they opened another one in Santa Fe, New Mexico.

Today, Flying Star Cafe has many locations. Seven are in Albuquerque. Others are in Bernalillo, Corrales, and Santa Fe. The Downtown Albuquerque cafe is in a very old building. It used to be the Southern Union Gas Company Building. This building is even on the National Register of Historic Places!
