Gingerol facts for kids
Gingerol is a special natural chemical found in fresh ginger. It's what gives ginger its unique spicy taste and smell. Think of it as a cousin to other spicy chemicals like capsaicin (which makes chilli peppers hot) and piperine (which makes black pepper spicy).
Gingerol usually looks like a yellow, strong-smelling oil. Sometimes, it can also form a solid, crystal-like substance that melts easily.
When you cook fresh ginger, the gingerol changes into a new chemical called zingerone. Zingerone is less spicy than gingerol, but it has a nice, sweet, and spicy smell. If you dry ginger, gingerol changes into chemicals called shogaols. Shogaols are about twice as spicy as gingerol! This is why dried ginger often tastes much spicier than fresh ginger.
