Goxua (pronounced "go-SHOO-ah") is a super yummy dessert from the Basque Country. This special region is located in northern Spain and southwestern France. Goxua means "sweet" in the Basque language. It is especially popular in the city of Vitoria-Gasteiz.

Many people believe that a pastry chef named Luis Lopez de Sosoaga first made Goxua in 1977. He was from Vitoria. However, another pastry chef, Alberto Bornachea, says his father invented it. He claims his father was trying to copy a dessert called Catalan cream. He named his new dessert "cazuelita."

What is Goxua Made Of?

Goxua has a few tasty layers. It usually starts with a base of fluffy whipped cream. On top of that, there is a soft layer of sponge cake. The top layer is a sweet, caramelized custard.

In the northern part of the Basque Country, sometimes Goxua is made with a layer of fruit jam instead of custard.

How to Enjoy Goxua

There are two main ways to serve and enjoy Goxua.

  • Individual Bowls: You can find Goxua served in small, individual bowls. It looks a lot like a custard or a yogurt. This is a common way to enjoy it as a single dessert.
  • Traditional Cake: The more traditional way to serve Goxua is as a whole cake. This cake is often presented in a special clay pot. People can then scoop out portions to share.
