Herrgårdsost (pronounced "herr-gords-oost") is a popular type of cheese from Sweden. Its name means "Manorhouse cheese." This cheese is made from cow's milk. It is known for its mild, nutty, and creamy taste.

Herrgårdsost is a semi-hard cheese. This means it's not very soft, but also not extremely hard. You can often spot it by its small, round holes and its smooth, waxed surface. A typical wheel of Herrgårdsost is about 40 cm (16 in) across and 12 cm (4.7 in) thick. It usually weighs around 14 kg (31 lb).

How Herrgårdsost is Made

Making Herrgårdsost is a careful process. It usually starts with pasteurized part-skim milk. Pasteurization is a heating process that makes milk safe to drink.

Starting the Cheese

First, special bacteria are added to the milk. These are called bacterial starters. They include lactic acid bacteria, which make the milk more acidic. Another type is propionic bacteria. These are important because they create the carbon dioxide gas that forms the little holes in the cheese.

Curdling and Shaping

After the milk becomes acidic, a substance called rennet is added. Rennet helps the milk to curdle, turning it into solid clumps called curds. The curds are then gently heated to about 43 °C (109 °F).

Next, the liquid part, called whey, is drained away from the curds. The curds are then pressed together. This pressing shapes them into the large, round cheese wheels.

Salting and Aging

Once shaped, the cheese wheels are placed in a salty water bath called brine. This step adds flavor to the cheese. It also helps to preserve it. After salting, the cheese wheels are covered in a protective layer of wax.

Finally, the cheese is aged. This means it is stored in a special place to mature. Herrgårdsost is usually aged for at least three or four months. Some wheels are aged for much longer, even up to one or two years. This aging process helps the cheese develop its unique mild, nutty, and creamy flavor.

History of Herrgårdsost

Herrgårdsost began to be made in the 1800s. It was first produced at large country estates in Sweden. These estates were often called "manor houses." This is how the cheese got its name, "Manorhouse cheese."
