What are Huevos Rancheros?
The classic Huevos rancheros dish starts with fried eggs. These eggs are placed on soft tortillas. The tortillas can be made from corn or flour.
A fresh salsa goes on top of the eggs. This salsa is usually made from fresh tomatoes, chili peppers, onion, and cilantro. It adds a lot of flavor!
People often serve Huevos rancheros with other yummy sides. These can include refried beans, Mexican-style rice, and slices of avocado or guacamole. Sometimes, a little extra cilantro is sprinkled on top.
Different Ways to Make Them
As Huevos rancheros became popular outside of Mexico, people started making them in new ways. Sometimes, they use wheat flour tortillas instead of corn ones. Instead of fresh tomato salsa, some versions use a smooth chili sauce or enchilada sauce.
People also started adding new ingredients that are not traditional. These can include cheese, sour cream, or even lettuce. These additions are more common outside of Mexico.
Huevos Divorciados
There is a fun variation called "Huevos divorciados," which means "divorced eggs." It's similar to Huevos rancheros, but with a twist.
You get two eggs, just like in the original dish. However, each egg has a different sauce! One egg might have a red salsa (salsa roja), and the other might have a green salsa (salsa verde). They are "divorced" because their sauces are separate.
Another similar dish is "huevos ahogados" or "drowned eggs." For this dish, eggs are poached (cooked gently in liquid) directly in a tomato-chile salsa.
