J&L Grubb is a famous Irish company that makes delicious cheeses. It was started by Jane and Louis Grubb in 1984. They began making cheese on their farm in Beechmount, which is near a town called Fethard, South Tipperary. Jane Grubb first tried out different recipes in an old brewing pot. Cashel Blue is a special kind of blue cheese made by hand. It is known for being semi-soft and having a creamy feel in your mouth. You can see blue lines, called veins, running through it. These veins are what give blue cheese its unique look and taste.
This cheese is made from cow's milk. More than half of the milk comes from the Grubb's own farm. The rest is bought from other farms nearby. Cashel Blue got its name from the Rock of Cashel. This famous landmark can be seen from the fields where the cows graze.
The blue flecks in the cheese are made by a special kind of mold called Penicillium roqueforti. This is the same mold used to make other well-known blue cheeses like Roquefort and Stilton cheese.
