Learning to Cook
Joseph Scarpone started his cooking journey early. His first full-time job was at a restaurant called Frascati. There, he learned from Chef John DiPrimo.
In 1995, Joseph moved to Napa Valley. This area is famous for its food. He worked at a well-known restaurant called Tra Vigne. He worked under a famous chef, Michael Chiarello. Joseph quickly showed his skills. He was promoted to sous-chef. A sous-chef is like a second-in-command in the kitchen.
Joseph returned to Philadelphia in 1999. He worked at Brassiere Perrier. This restaurant was owned by Chef Georges Perrier. Later, Joseph went back to Tra Vigne. He became the executive sous-chef and then the executive chef. This means he was in charge of the kitchen.
In 2005, Joseph came back to Philadelphia. He opened his own restaurant called Sovalo. It was in the Northern Liberties area. Sovalo quickly became popular. It received great reviews from the Philadelphia Inquirer newspaper.
Opening Agiato
After four years, Joseph closed Sovalo. He wanted to open a new restaurant. This new place was called Agiato. It was located in the Manayunk neighborhood of Philadelphia.
Agiato was planned to open in the fall of 2009. Joseph worked with The Belvedere Business Group to open it.
