Kaori Ishibashi (石橋かおり Ishibashi Kaori; born May 6, 1962) is a famous Japanese expert in sweets. She teaches people how to bake and writes many cookbooks. She is especially known for her amazing cheesecakes. Kaori Ishibashi has written 48 baking cookbooks and created over 400 cheesecake recipes!

Early Life and Education
Kaori Ishibashi was born in Chiba, Japan, on May 6, 1962. She grew up in Nagano, Japan. After high school, she studied at Meiji University of Integrative Medicine. She learned to be a practitioner in acupuncture and moxibustion. These are traditional Japanese healing methods. Acupuncture uses thin needles, and moxibustion uses heat to help the body. After graduating, she worked at a hospital in Tokyo.
Baking Career
Kaori Ishibashi started her baking journey in 1992. She taught herself how to bake. At first, she sold her baked goods to local restaurants. She also made special cakes for weddings. She did all this while working as an acupuncturist.
Learning and Growing
Kaori loved baking, but she wanted to make her recipes perfect. She read many cookbooks, but her results were not always what she expected. So, she decided to learn from a famous baker named Makiko Fujino. Kaori trained with Fujino for three years. She then received a special diploma from Makiko Foods Studio.
After this, Kaori traveled the world to learn even more. She attended top cooking schools. These included Bellouet Conseil in France and The Culinary Institute of America in the United States. She also trained at the Valrhona Chocolate School in France. She learned from many French chefs who visited Japan.
First Cookbook and Studio
By 1996, Kaori had done hundreds of baking experiments. She used all her knowledge to write her first book. It was called "Chiffon cake never fails." This book helped many people bake perfect chiffon cakes.
Today, Kaori Ishibashi runs her own baking studio. It is called "Cake" (ケイク). Her studio is in her newly renovated house in Nagano. She offers a year-long class there. Students learn all the basic skills of baking.
Current Projects
Kaori Ishibashi lives and works in Nagano, Japan. She continues to be a confectionery researcher and author. She often shares her recipes in popular magazines. These include "Lettuce Club" and "Saita."
Kaori is also the president of Cake Freak Inc. She is currently working on an exciting new project. She plans to open her very own cheesecake shop in New York City.
