How Kilishi is Made

Making Kilishi is a careful process that involves several steps to make sure it tastes great and lasts a long time.

Preparing the Meat

First, the meat (usually beef, lamb, or goat) is carefully prepared. Any bones are removed. Then, the meat is sliced into very thin pieces, almost like sheets. These thin sheets are usually about one meter long or even shorter, which helps them dry easily. After slicing, these meat sheets are left to dry a bit before the next step.

The Special Labu Paste

The next important part of making Kilishi is a special paste called labu. This paste is made from ground peanuts, mixed with water to make it smooth. To give Kilishi its amazing flavor, spices, salt, and ground onions are added to the labu. Sometimes, a little bit of honey or date palm is added to make it slightly sweet in a natural way.

Once the labu paste is ready, each thin sheet of dried meat is dipped into it. This makes sure the meat is fully covered with the flavorful paste. After being coated, the meat sheets are left to dry again for several hours. This drying helps the flavors soak into the meat and prepares it for the final step.

Roasting for Flavor

After the meat has dried with the labu paste, it's time for the final step: roasting! The meat is roasted over a fire on a wire mesh. This roasting gives Kilishi its unique smoky flavor and crispy texture.

Kilishi is very popular in the northern parts of Nigeria and Cameroon. It was first made out of a need to preserve meat for a long time. This was especially important for merchants who traveled across the Sahara Desert for trade. Kilishi gave them a good source of protein that wouldn't spoil easily.
