Kkomakjim (Korean: 꼬막찜) is a yummy Korean side dish made with seasoned cockle clams. It's a popular seafood dish that Koreans enjoy all year, but especially in the summer!

Kkomakjim is made from small saltwater clams. When choosing clams for cooking, people look for two things:

Cleaning the Clams: Haegam
Before cooking, the cockle clams need to be super clean! This special cleaning and boiling process is called Haegam (Korean: 해감). It's important so the clams taste great and don't get tough. If you boil them for too long, they can lose their flavor and nutrients.
There are two main ways to clean the clams:
- First, clean the clams well. Then, put them in cold water with a little salt. Cover the bowl and put it in the fridge for at least an hour. The salty water helps the clams push out any sand they might have inside.
- Another way is to clean the clams with a brush. After that, soak them in salt water for about three hours. This helps remove any dirt from inside the clams.
How to Cook Kkomakjim
After the clams are clean, it's time to cook them! Put plenty of water in a pot and bring it to a boil. Once the water is boiling, add a little cold water, then put in the cockle clams.
As the water starts to boil again, the clam shells will slowly begin to open. If a shell doesn't open after cooking for a bit, you can gently open it with a spoon or chopsticks. The cooking time depends on how many clams you have, but it usually only takes a couple of minutes once the water is boiling.
Making the Seasoning
Once the steamed cockle clams are ready, they are topped with a special sauce. This sauce is usually made with soy sauce as its base.
The seasoning often includes:
- Finely chopped red and green chili peppers.
- Green onions or scallions (Korean: 파; pa).
- Minced garlic.
- Sesame seeds (Korean: 참깨; chamkkae).
- Sesame oil (Korean: 참기름; cham-gi-reum).
- Korean chili pepper powder, also known as gochugaru (Korean: 고춧가루; gochutgaru).
