La tiang (Thai: ล่าเตียง, pronounced [lâː tīaŋ]) is a very old and special Thai snack. It's like a tiny, tasty package! This snack became famous from a poem written by King Rama II when he was a prince. He wrote the poem during the time of his father, King Rama I. La tiang is made of minced shrimp, pork, and peanuts. These yummy ingredients are wrapped inside a thin, mesh-like omelette. The snack is usually shaped like a small square.

What is La tiang Made Of?

La tiang has two main parts. First, there's the crispy, mesh-shaped omelette wrapper. Second, there's the tasty filling inside.

The Filling

The filling is made from finely chopped (minced) pork and shrimp. It also has crunchy roasted peanuts. For flavor, chefs add garlic and coriander. The filling is seasoned with pepper, a special sauce called fish sauce, and sweet coconut palm sugar.

The Wrapper

The wrapper is a very thin omelette. It's made from egg and cooked in a special way to look like a net or mesh.

How is La tiang Prepared?

Making La tiang is a bit like cooking a tiny, delicious present.

Preparing the Filling

First, the chefs chop up shallots, coriander root, garlic, and pepper. These are all fried together until they smell wonderful. Next, the minced pork, chopped shrimp, and roasted peanuts are added to the pan. Everything is mixed well. Finally, the filling is seasoned with fish sauce and coconut palm sugar to give it a sweet and savory taste.

Making the Egg Wrapper

To make the special egg wrapper, the chef dips their fingers into a bowl of egg mixture. Then, they quickly flick the egg onto a hot pan. This creates a cool, net-like pattern as the egg cooks.

Wrapping it Up

Once the egg wrapper is ready, the cooked filling is placed on top. The egg is then carefully folded around the filling. This creates the famous square shape of La tiang.
