How to Make Lupis
Making Lupis involves a few simple steps. First, the special sticky rice, called glutinous rice, is soaked in water. A little salt and lime juice are added to the water. This helps to flavor the rice.
After soaking, the water is drained from the rice. Then, small amounts of the soaked rice are carefully placed onto fresh banana leaves. The leaves are then folded and wrapped to create single-serving portions, often in a triangle shape. These wrapped rice packets are set aside while the sweet syrup is prepared.
To make the syrup, Coconut sugar is mixed with water and heated until it boils. It's left to simmer until it becomes thick and gooey. When the Lupis is ready to be served, the banana leaf wrapping is removed. Freshly grated coconut is sprinkled over the sticky rice, and then the warm, thick coconut sugar syrup is drizzled all over it. It's a perfect combination of sweet and chewy!
