Mang Tomas is a very popular condiment (a sauce or spice added to food to make it taste better) from the Philippines. Its most famous product is a special kind of lechon sauce. Lechon is a roasted pig dish, and this sauce is traditionally served with it.

The story of Mang Tomas began in the late 1980s. Two brothers, Hernan and Ismael Reyes, bought a secret recipe for lechon sauce from a shop called Aling Pitang in Quiapo, Manila. They decided to name their new sauce "Mang Tomas Sarsa." They chose this name because there was already a well-known lechon shop in La Loma, Manila, also called Mang Tomas.

In 1991, a company called Southeast Asia Food, Inc. (which is now NutriAsia) bought the Mang Tomas brand. Today, you can find the sauce sold as "Mang Tomas All-Around Sarsa" in the Philippines. If you are in other countries, it is usually called "Mang Tomas All-Purpose Sauce."

The original lechon sauce often included ground liver. For a while, Mang Tomas products sold internationally did not list liver as an ingredient. However, since 2022, all types of Mang Tomas sauce now include pork liver as part of their recipe again.

What Kinds of Mang Tomas Are There?

Mang Tomas makes different types of sauces for you to enjoy. Here are the main ones:

  • Mang Tomas All-Around Sarsa: This is the classic sauce that goes well with many dishes.
  • Mang Tomas Siga Hot & Spicy All-Around Sarsa: If you like a little kick, this one is spicy!
  • Mang Tomas Lechon Paksiw Sauce: This sauce is specially made for a dish called Lechon Paksiw, which is leftover lechon cooked in a tangy sauce.
