Medisterpølse facts for kids
Medisterpølse (also called medisterkorv or just medister) is a special type of sausage from Scandinavia. It's a thick, spiced sausage made from minced (finely chopped) pork and suet (which is hard fat from animals). This mixture is then put into a casing, which is like a skin for the sausage.
This sausage has a slightly sweet taste. The meat is very finely ground. It's seasoned with chopped onion, allspice, cloves, salt, and pepper. Medister is a traditional dinner sausage in both Denmark and Norway.
What Does "Medister" Mean?
The word medister comes from two older words. Med means 'with', and ister means 'suet' (animal fat). So, it literally means 'with suet'.
This name first appeared in a Swedish cooking book. This book was written a very long time ago, in the early 1500s.
How Medister Sausage Is Made
The way medister sausage is made has changed over time. Long ago, the meat for the sausage was chopped by hand using a knife. Today, machines chop the meat very finely. This gives the sausage a smoother texture than it used to have.
Medister is made in one very long piece. It is not cut into smaller sausages until after it has been cooked. People usually cook or fry it right before they eat it.
Because it's kept fresh and not cooked before being sold, medister needs to be kept cold. You should store it in the refrigerator or freezer until you are ready to prepare it.
